Pink Pancakes

Lila is starting to become more of a picky eater, so I am trying to figure out ways to get her to eat the right foods.  From the cookbook "Deceptively Delicious" I made Lila Pink Pancakes (with beets).  See loves them!

    Those pancakes remind of the pink hummus I made once (also made with beets).
